Signature FSE has partnered with patisserie consultant Claire Clark from Pretty Sweet to demonstrate French manufacturer De Buyer’s new perforated tart rings at Hotelympia in London’s Excel centre.
Every day during the show, from Monday 29 February to Thursday 3 March, Clark and Pretty Sweet business partner Sarah Crouchman will create new patisserie creations on the Signature stand (3061) using the de Buyer pastry tart rings.
De Buyer collaborated with executive pastry chef Christophe Renou from the Valrhona Chocolate School to design a new shape of perforated tart rings, said to allow for innovative and easy to cut individual servings.
The perforated stainless steel rings are aimed at high-end patisserie as they are said to enable uniform cooking for a crusty and browned pastry, or fast freezing.
The perforation is also designed to prevent the dough from blistering during baking.
