New to Mitchell & Cooper for 2018, and joining its range of Nemox Gelato machines, is the Nemox Wippy 2000, suitable for boutique ice cream parlours, restaurants and cafes, among other sites.
The Wippy 2000 is a whipping machine capable of producing whipped cream that should maintain its texture and temperature. The rotary pump powered mixer features dual setting controls, allowing the operator to pump either cream or air to achieve the desired consistency and texture.
The unit can be used for finishing off desserts, adding a finish to hot drinks, and for topping ice cream and gelato. The small footprint of the machine should also ensure it’s suitable for small kitchens as well as medium sized catering operations.
The liquid cream base is indirectly cooled to 4°C in the machine and held at the conditions for use. The refrigeration system also keeps the cream at the correct temperature all the way through the dispensing nozzle to ensure the dispensed cream retains its structure. Both light and heavy creams can be used to achieve the desired end product, and both varieties should hold a stable texture when whipped.
With a clear lid and an overrun in the tank, the operator should have a clear view of the product during whipping, and the cycle can be ended at any time once the desired consistency has been reached.
