Metcalfe Catering Equipment recently held a ‘Train the Chef’ trainer day at the new First Choice demonstration kitchen in Cannock.

The informal event, which was designed to provide a hands-on experience of the Swiss engineered Atollspeed High Speed Oven range and the newly launched Impingement Conveyor Oven, was headed up by chef trainer and international sales manager Georg Pitsch.

He highlighted the Atollspeed’s key benefits, which are said to include simple programming, and the ability to regenerate and crisp products without shrinking or over cooking them, even when they are in an aluminium or stainless steel container.

Guests were reportedly impressed by the oven’s ability to make light work of raw items such as puff pastry, rack of ribs, chicken wings, soufflé and raw dough pizza, and were interested in the ease with which sous vide products such as lamb and pork belly were regenerated and crisped.

Attendee Mike Ashcroft, from consultancy Ashcroft Commercial Kitchens, commented: “The Atollspeed oven was very impressive. It was intuitive to use and I especially liked the programmes that can be loaded onto the oven for the end users.”

Radford Chancellor’s David Siddall added: “Having worked on similar equipment, I find that the Atollspeed is far more user friendly, and up-to-date with how we integrate with a touch screen. The speed and ease of use were the key things I will take away. The breakfast cooked evenly and the chicken had a crisp skin and moist inside. Even the toasted sandwiches were excellent and the settings could be changed easily.”
