Manitowoc sends smoke signals

The ConvoSmoke option is available with Manitowoc’s Convotherm 4 combi steamer.

Manitowoc Foodservice has added the choice of a ConvoSmoke system to its Convotherm 4 combi steamer.

The in-built ConvoSmoker option features an integrated smoker box which holds up to eight flavoured bisquettes to provide smoked flavour infusions.

The automated smoke cooking is available in Convotherm 4 easyTouch table top models, and means a separate smoking oven is not required.

It can be programmed as a step into other cooking profiles, which is designed to enable faster cooking times. Its multi-step and multi-stage smoke cooking utilises a steam, hot air and combi method, said to give a quality end flavour.

The ConvoSmoker can be operated at the touch of a button with the Press & Go feature, and can be used for hot and cold smoking – the latter can be achieved by placing a solid pan filled with ice directly above the smoker box before the smoker begins.
