Oldham-based pizza equipment specialist Linda Lewis Kitchens (LLK) has secured approval for its wood-fired Giovanni and Da Vinci range of pizza ovens, which are now on ‘The List’ to be used in smokeless zones throughout the UK.

The newly developed range of ovens is handcrafted in Italy and has been designed to offer customers an authentic oven with superior cooking abilities and fuel efficiency. They can be built on-site in a matter of hours by LLK’s team of engineers, eradicating any access issues a site may have.

The Giovanni range is LLK’s highest specification oven and is available in wood, gas, and dual fuel supply to suit a range of establishments. The innovative oven has been manufactured to speed up production, thanks to its revolving stone base which should makes unloading and loading easier, helping to accelerate overall production by up to a claimed 20%.

The wood-fired oven has a shelf that has been designed so that the rotation of the stone base does not affect the burning wood and takes as little space away from the cooking floor as possible. The shelf has been positioned in a way that evenly distributes the heat, which is said to maximise the baking quality of the oven whilst guaranteeing no cold spots.

Both the Giovanni and Da Vinci models have superior 120mm thick insulation inside the oven, as well as a 200mm thick insulation in the upper cavity which allows the oven to reach and retain temperatures of up to 1,200°C.

The Da Vinci range has an 80mm stone cooking floor which helps to retain heat and produce an even, consistent bake. The oven has the option to be supplied with an electric control panel which notifies the operator when the oven changes temperature indicating that more wood needs to be added.

Both models are manufactured using high alumina refractory concrete, which is said to ensure thermal stability. The dome shape hugs the cooking floor inside of the oven, designed to allow no heat to escape through gaps. The dome itself is aerodynamically designed to avoid suffocation of the flame, offering a ceiling height of 440mm which is claimed to deliver energy savings as a result of its ability to retain heat.
