Imperial Catering Equipment has rolled out a new product that it claims will stop caterers from having to worry about how to maintain the temperature of their dishes.
The Cambro Camcart, which got its first airing at Hotelympia earlier this year and is now available to the dealer market, is a heated, portable food transporter that can accommodate 720 servings.
Imperial says the unit is ideal for large volume off-premise and satellite events and locations that demand durability.
The Camcart UPCH-Series provides a 45-minute preheat time from room temperature and uses gentle, 150°-165°F (65°-74°C) heat to maintain food moisture. It can hold 16 full size 4-inch (10cm) deep pans, equating to 720 servings.
According to Imperial, the temperature is maintained for up to four hours in transportation after it has been unplugged. It also claims that if the door is opened for 30 seconds, the temperature of the unit will be recovered in just three minutes.

Imperial says the unit is extremely energy efficient and energy star qualified, using less energy than three standard 100-watt light bulbs — “substantially less” than comparable metal cabinets.
