Hallmark Kitchens has helped Michelin star chef, Yoann Chevet, create an open kitchen for his restaurant, Sinabro, which opens in Battersea Rise next week.
Chevet designed the kitchen and restaurant himself, but brought in Kent-based Hallmark to install the catering equipment.
The space is intimate, with 28 covers, 16 of which will be at the bar overlooking the open kitchen, eight in a private space at the rear and the remainder on two-seater tables around the bar.
Diners seated at the bar of the open kitchen will be able to personally interact with the chef to find out more about the dish, while watching it being created before their own eyes.
The French-born chef began his culinary journey at the age of 15 and has dedicated his 30-year career to some of the best Michelin starred restaurants in Paris and London including the triple Michelin starred Taillevent in Paris, Le Meurice, Le Celadon and La Table de Joel Robuchon.
Chevet will run the restaurant with his wife, Sujin, and admits that it has taken them four years to find the “perfect premises”.
Sinabro will serve what Chevet describes as ‘Bistronomique’, falling somewhere between Bistro and Gastronomique, the root of which is French fine dining. However, he says he won’t be afraid to mix it up with fresh, seasonal or unique ingredients from many different origins.
