FEM has introduced Sirman’s Dolomiti blast chiller to the UK market, just weeks after it announced it is supplying the brand’s contact grills.
The new 2/3 blast chiller is said to be compact enough to bring this technology into a smaller kitchen, with a size of 640 x 630 x 400mm.
FEM believes the unit offers all the advantages of blast chilling – including less wastage and improved food safety, quality, appearance and taste.
It is designed to chill 8kg of food to 3°C in 90 minutes, or shock freeze 5kg to -20°C in 240 minutes. Its 29litre capacity houses three 2/3 gastronorm shelves.
The internal temperature can be adjusted manually or controlled via a supplied core temperature probe.
Its all-stainless steel construction is claimed to be easy to clean, while a heated door gasket is designed to prevent sticking and clogging.
FEM supplies a choice of Dolomiti models ranging in sizes up to 282litre capacity (Dolomiti 14), all with 1 year parts and labour warranty. The Dolomiti 2/3 has a list price of £2,770 + VAT.
