Cold store specialist, Cold Store Rentals, has recently supplied three cold rooms to Cornwall bistro, The Weir Restaurant.
The three rooms comprise a chiller for food preparation and cold drinks; a freezer for frozen food storage; and a preparation room.
Fraser Proudfoot, owner of The Weir Restaurant in Bude, explained: “We opened in 2011 with a small restaurant on the back of a large building and have grown rapidly since then. At first we were expecting 40-50 covers a week but are doing that before lunch most days, and we expect at least 400-500 covers during the summer season.”
The original kitchen was connected to a network of cold stores and wooden sheds that were stocked full of produce and equipment. “The new rooms have enabled us to double the size of our kitchen and bring in a bigger oven and greater preparation space, so we can bring down the wait time of food for customers and employ more staff,” added Proudfoot.
Cold Store Rentals supplied a Viessmann product with a third-party finance lease agreement over 5 years. Steve Prior, director at Cold Store Rentals, said: “The cold rooms have independent floors so that they can stand outside with minimal preparation needed to the ground on which they stand. On a similar vein, if the units need moving due to site expansion in the future, it is easy to do so.”
Proudfoot commented: “The Cold Store Rentals team were extremely efficient and are incredibly easy to deal with, looking after the project from start to finish.” The Weir Restaurant is looking to expand its team and open during evenings over summer.
