Essex-based dealer CCE Group has brought Michelin star chef Adam Stokes’ ideas to life in his restaurant’s new kitchen.
The distributor created the back of house and food bar areas for Adam’s Restaurant in Waterloo Street, Birmingham – a successor to his Michelin star restaurant in nearby Bennetts Hill.
The new Adam’s features a contemporary look with black granite and stainless steel features.
The project posed some interesting production challenges for CCE. Foremost amongst these was the dismantling and reassembling of components to negotiate restricted access through the city’s German Christmas market, and a narrow rear entrance to the site via a flight of stairs less than a metre in width.
Ray Costelloe, CCE’s MD detailed: “The Athanor cooking range was actually dismantled in the street and reassembled on the kitchen floor.
“Other major units included a chef’s table designed to seat 12; ovens and refrigeration equipment on the lower ground floor; and a meat and vegetable bar on the ground floor servicing the 35-seater restaurant and 16-seater private dining area.”
Both the chef’s table and food bar were bespoke stainless steel constructions, factory folded and finished on site without visible joints or welds.
CCE also fitted Rational ten and six stack ovens with ultra-vents, and Precision refrigeration units.
