Catering Projects feels the buzz for pizza outfit

Catering Projects is to design, supply and install the counter and back of house catering kitchen for Pizza Buzz, a new pizza restaurant opening in May on Worship Street, London.

The main counter is 11m x 4m, comprising a number of chilled contact cooled wells set into the surface. Voids constructed under the counter contain refrigerated drawer units from True refrigeration make this an efficient self-contained pizza production facility.

Neatly tucked into the return section of the counter is a Frigomeccanica ice cream display which will hold ice cream produced specially for Pizza Buzz.

The counter itself will be clad in custom made Terrazzo panels both to the front and top with a clean line of glass running the full length to form a sneeze screen.

The back of house contains a Rational combi-oven with a vent hood, giving cooking flexibility. A small dough production area with mixer and roller will produce the pizza bases from flour provided by Pizza Buzz’s own flour mill.

The installation is scheduled to start on 27 April for a week’s duration. Shaun Maisey, national accounts manager for Catering Projects said: “After 6 months of development and a 6 week production schedule, the counter will be delivered in sections to site. It will be installed over a period of 5 days, during which time our engineers will commission and test the refrigeration, fit the external cladding and glass and seal any joints to provide a hygienic production surface.”

Owned by restaurateur Barnaby Meredith of The Meredith Group, the 3,500ft2 restaurant will serve customised pizzas to a maximum of 85 covers. Emergent Design Studios provided the interior design.
