Carpigiani infuses ice cream with new technology

The Infuser Kit consists of a hollow drum positioned in the chamber of the Carpigiani Maestro batch freezer.

Ice cream equipment manufacturer Carpigiani has added to the capabilities of the Maestro batch freezer range it launched in 2014.

It has introduced the Infuser Kit, an option which comprises a hollow drum, positioned in the centre of the beater, within the chamber. Said to be the result of extensive research and development, the Infuser can be filled with dry ingredients, spices and other flavourings, allowing the base mix to pass through small holes during a specially programmed heat cycle and infusing the chosen flavour evenly though the mixture.

Designed to replace the need to pre-infuse flavours out of the machine, often for many hours, the new infuser kit is claimed to offer consistency and cut down on the time associated with producing gelato. The kit can infuse flavours that can be challenging to control, such as loose leaf tea, herbs, spices or flowers.

The Infuser kit, available as an optional extra, can be fitted retrospectively to Carpigiani Maestro units already purchased, requiring a remodelled beater and a short visit from a Carpigiani engineer to add the dedicated infusion programme to the pre-set menu.

Scott Duncan, sales director at Carpigiani UK commented: “The Carpigiani Maestro has been one of our most popular models since launching in 2014. Combining the latest Hot-Cold-Dynamic technology, which allows for heating, and freezing in the same unit, makes the Maestro suitable for wonderful gelato, sorbet, sauce, pastry and cream bases, and it is this versatility that our customers have loved.

“The new Infuser Kit takes this functionality to an all new level by enabling the operator to create gelato and sauce with the most delicate of flavours. We’ve already had chefs creating stunning Matcha Green Tea gelato, or wonderfully subtle Earl Grey Tea gelato using the finest loose leaf tea and placing it in the infusion kit. Or for a truly unique twist, we’ve even had customers producing a smoked salmon gelato by adding flakes of freshly prepared salmon to the kit – a perfect accompaniment to a fish starter and something that will have your customers talking for a long time to come.”
