Alfa Pizza will use this month’s Host exhibition in Milan to launch its new range of Evolution wood and gas powered ovens.
Suitable for restaurants, pizzerias, bakeries or fast food trucks, the series is said to be easy to install and efficient.
Evolution can be supplied with a base or positioned on a flat kitchen top. The models are fitted with castors for ease of transportation and can therefore be situated inside or, in a terraced restaurant, outdoors.
For installation, the manufacturer says the only steps required are preparing the flue, wheeling in the oven and then connecting the two.
Several models are available, including the Quattro Pro, which could be used as a second oven to prepare specialist/free from dishes, or the slim Quattro Pro Top, which is designed to fit on any flat surface space in a commercial kitchen. Furthermore, the Opera model is said to be a larger oven which can meets the needs of a busy restaurant.
All models come with Forninox technology which is designed to enable a short cooking time. The oven’s cooking surface is made from refractory bricks that are claimed to cope well with heat and be made to last.
At Host, the ovens will be demonstrated by a chef who will use them to create dishes such as lasagna, gnocchi, vegetables, croissants, cookies, cakes and different kinds of pizza.
