The Airedale Group has just finished a scheme for what is said to be the UK’s largest banqueting site at the new InterContinental Hotel near the O2 arena in Greenwich, London.
The onsite Arora Ballroom will be able to host almost 3,000 guests for a sit-down dinner, so Airedale chose MKN appliances to cope with this huge amount of covers.
The Bradford-based distributor installed 14 x 20-grid MKN FlexiCombi combi steamers, which can serve food for banquet facilities of up to 3,500 people. Furthermore, 26 MKN combi steamers of various types were fitted in different areas for all day dining, a la carte, room service and within the main production kitchen.
MKN’s cooking equipment is said to deliver even and consistent cooking results, plus have cleaning features which are designed to enable cost savings for energy and water consumption.
Airedale’s MD, Mike Butt, commented: “Our team were delighted to be involved in such a prestigious project and working together with our partners we have all delivered a great scheme.”
The hotel will open at the end of January, and head chef Daren Pavey is looking forward to using the kit, after having visited the MKN factory near Hanover, Germany. “The barcoding system in the production area was very impressive. I am going to try and implement it in our kitchen because the organisation of various foods and cooking utensils in a busy kitchen such as ours is logistically a huge challenge,” he said.
Pavey’s senior sous chef, Michael Soduh was given a masterclass in the appliances and commented: “The FlexiCombi is very impressive and I can’t wait to get into our kitchen and cook up something extraordinary for our guests!”
